White Chicken Chili

Compared to the average chicken noodle soup, white chicken chili is a more hearty and healthy recipe because of the white beans. The added chili and the right amount of spice also enhance its flavor making it perfect for dinner or game nights. You can also go crazy with the toppings by adding cilantro, jalapeno, tortilla, and many others.

Ingredients:

  • 1 yellow onion; diced

  • 1 tbsp avocado oil

  • 3 garlic cloves; minced

  • 2, 4 oz cans Hatch green chili; diced

  • 3 tbsp whole oregano

  • 3 tbsp cumin

  • 2 tbsp JBros chili seasoning (https://www.jbroscooking.com/post/bbq-sunrise-sandwich)

  • 1, 32 oz carton chicken stock

  • 1, 32 oz smoked chicken broth

  • 3, 15.5 oz cans Great Northern Beans; drained, rinsed, and divided

  • 2 large skinless boneless chicken breasts smoked; shredded or chopped / Leftover chicken or turkey

  • 1 tbsp lemon juice

  • 8 oz cream cheese; softened

  • 1 tbsp chipotle hot sauce/ chili flakes/ or any favorite hot sauce

Directions:

  1. Prepare needed ingredients and heat pot in medium heat. Grease with avocado oil.

  2. Sauté diced onions, minced garlic, and diced green chili.

  3. Season with oregano, cumin, and JBros Chili seasoning.

  4. Pour in chicken stock and chicken broth into the mixture

  5. Set aside a cup of white kidney beans for bean purée, then add the remaining beans.

  6. Diced leftover chicken and add to the pot. Cook until simmering.

  7. Meanwhile, smashed set aside beans and stir in to thicken the soup.

  8. While boiling, squeeze half of the fresh lemon.

  9. Add cream cheese into the mixture and stir constantly. If you want it creamier, add 1/2 to 1 cup of heavy cream

  10. To enhance the flavor, add a table of any hot sauce of your choosing.

  11. You can finish off with some garnish. Serve while hot, Enjoy!
