This recipe takes us back to childhood when our parents and grandparents always cook this for us. We are the ones making it. Its crunchy bread complements the tomatoes, and its sweet and sour flavor seeps into your mouth in just one bite. This salad is easy to make and that the youth and the young at heart would love.
Ingredients:
crusty bread, optional for serving
5 large medium ripe red heirloom or beef steak tomatoes, cut into 1-inch cubes
1 clove of garlic, minced
1/2 cup red onion, chopped
salt and pepper to taste
1 tbsp extra virgin olive oil
8-10 fresh basil leaves, chopped
1 tbsp lemon juice
Directions:
1, Preheat the oven and heat crusty bread. Take from the oven and prepare the veggies.
2. Dice tomatoes and place in a large mixing bowl. Also, dice the garlic and onion before adding the tomatoes. Season with salt and pepper, then pour olive oil into the mixture,
3. Rinse basil leaves, then squeeze a tablespoon of lemon juice.
4. Turn the crusty bread into slices and add tomato salad on top of the bread.
5. Serve and enjoy!
