Summer Time Pasta

Who wouldn’t fall in love with summer time if you are served with a vibrant and tasty looking pasta? This pasta sure reminds of the happy times and good memories in summer making you feel in vacation with a single taste. Its ingredients aren’t expensive, it’s easy to make, and the family would surely enjoy over the summer heat. Make sure to try the Summertime Pasta before it goes out of season.


Ingredients:

  • 2 cloves of garlic, sliced

  • 1 pint of cherry tomatoes, quartered

  • 3 tbsp olive oil

  • 2 bell pepper color of choice, small to medium dice

  • 2 ears of corn kernels cut from cob

  • Salt and Black pepper, to taste

  • 1 lb of pasta of choice

  • ¾ cup of marinara sauce of choice (jbroscooking.com/post/tomato-sauce)

  • 2 tbsp fresh basil

  • 6 tbsp grated Pecorino Romano cheese


Directions:

  1. In a large skillet over medium heat, add 2 tbsp of olive oil and garlic. Cook for about a minute or until golden brown.

  2. Add the tomatoes and cook until soft, for about 3 mins. Then, add bell pepper and corn until tender crisp for about 2-3 minutes. Season with salt and pepper to taste.

  3. Meanwhile, bring a large pot of salted water to a boil. Cook pasta according to package instructions. Reserve some of the pasta water before draining.

  4. Going back to the mixture, pour the marinara sauce and stir. Add pasta water to change the sauce’s consistency. Do not forget to add the fresh basil and Pecorino Romano cheese.

  5. Drain the pasta and mix with the sauce.

  6. Serve right away and enjoy!
