Mexican Pizza

Not sure whether to go Italian or Mexican food for your meal? No worries, this recipe has got you covered. This Mexican Pizza is filled with cheesy refried beans, juicy beef, and spicy seasonings; a perfect combination of Italian Pizza and Mexican flavor. You can also add more spice such as Tabasco or more chili if you want it burning in your mouth. Fun fact: this is a homemade version of the authentic Taco Bell Mexican Pizza which came to the menu around 1984 but was taken out last year. So, if you’re missing its taste, make sure to try cooking this one out!



Ingredients:

1-pound ground beef

1 can diced tomatoes with green chilies

2 tbsp taco seasoning (store bought or see recipe below)

1 can refried beans

4 cups shredded Mexican blend cheese

6 tbsp Enchilada sauce

½ cup butter

12 medium flour tortillas


Homemade Taco Seasoning:

¼ tsp salt

¼ tsp black pepper

1 tsp garlic powder

1 tsp smoked paprika

1 tsp ground cumin

½ tsp onion powder

1 tbsp chili powder

¼ tsp crushed red pepper flakes

½ tsp dried oregano

*mix all seasoning and store in airtight container

Optional for garnish:

Shredded lettuce

Sour cream

Sliced black olives

Directions:

1. Brown the ground beef in a skillet. Meanwhile, prepare the taco seasoning and add to the meat. Mixed the diced tomato and chilies as well. Cook until liquid evaporates.

2. On another pan, cook in the refried beans. Add in cheese, butter, and Enchilada sauce. Season with salt and pepper. Mix well. (Optional: Add more spice if desired)

3. Heat the tortillas and lay on a baking sheet afterwards. Spread the beans in the tortilla, then add a layer of meat. Scatter cheese on top then cover with another tortilla. Tip it with Enchilada sauce and cheese.

4. Bake in the oven at 425˚F for about 7-10 minutes. You could also add some garnish such as lettuce, sour cream, or black olives to finish up your pizza.

5. Serve hot and enjoy!
