Today Joe and John are going to make hambone soup with their leftover Christmas hambone. John is a waste not want not kind of guy and likes to make sure we don't throw out any food. Next time you have ham for a holiday, save that bone and make this delicious soup.

Leftover Hambone Soup
Ingredients:
1 leftover hambone
1 tbsp olive oil
3 cloves minced garlic
1 diced onion
2 carrots peeled and diced
1 russet potato peeled and diced
1 cup canned kidney beans drained and rinsed
3/4 frozen corn kernels
3/4 tsp fresh thyme leaves
2 bay leaves
salt
pepper
1 1/2 cups leftover ham diced
Directions:
1. Put hambone in a large stock pot and add enough water to cover the hambone halfway, about
6-7 cups. Bring to a boil then reduce heat and simmer about 45 minutes, remove and throw
away hambone.
2. Heat olive oil in a large pot over medium heat. Add garlic, onion, carrots and potatoes. Cook
stirring occasionally until onions are translucent, about 2-3 minutes. Stir in the ham stock,
beans, corn, thyme and bay leaves. Season with salt and pepper to taste.
3. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 10-12 minutes.
Add in ham and cook until heated through, about 1-2 minutes. Serve immediately.
