Cooking should be easy and enjoyable, and that’s what we are trying to tell you in this recipe. Our leftover breakfast tacos are full of flavors and easy to make. Its ingredients can be varied and flexible since it comes from what is already available in the kitchen. As our BBQ tour comes to an end, we hope that we’ll keep our palates curious about different delectable and stay resourceful to enjoy cooking at its finest.
Ingredients:
Cooking oil (for deep frying)
2 potatoes, washed and diced
4 tbsp butter
1/2 - 1 lb leftover BBQ meat
4 eggs
Corn & flour tortillas
Monterey jack cheese
Seasonings to taste:
JBros Salt, Pepper, & Garlic (SPG)
Steakhouse seasoning
Pepper
Onion powder

Salt
Cholula Chipotle Hot Sauce
Directions for each filling:
Potatoes
In a medium pan, heat in medium-high heat and pour cooking oil enough for deep frying.
Fry the potatoes and season with JBros SPG, and steakhouse seasoning to taste. Let it cook until golden and crispy.
Set aside on a dry paper towel to remove excess oil.
Meat
In another medium pan, melt butter and add the leftover meat.
Season with pepper, onion powder, JBros Bro-B-Q Rub, & JBros SPG to taste.
Set aside once done.
Eggs
Crack four eggs and scramble them up.
In another pan, cook the scrambled eggs, and season with pepper and salt to taste.
Cut eggs into portions for each taco. Set aside
Assembling the Taco
Heat up both sides of the corn, and flour tortillas.
Assemble the tacos the JBros way by starting with a tortilla, Monterey cheese, egg, meat, potatoes, and more Monterey cheese.
For more flavor, finish with a seasoning of Cholula Chipotle Hot Sauce
