Today, Joe and John are making Italian sausage from scratch. This is their first time making this and we think they did an excellent job.
Joe points out that it is a lot of work if you are going to do it for each meal but might be a great idea for a dinner party.

Homemade Italian Sausage
Ingredients:
3 lbs pork butt
1 tbsp garlic
2 tbsp paprika
1 1/2 tsp toasted fennel seed
1 tbsp salt
1 tbsp freshly cracked black pepper
1 tsp cayenne
2 tbsp parsley leaves
pork casings
Directions:
1. Combine pork and seasonings in a large bowl and mix together. Cover and refrigerate
overnight or up to 24 hours.
2. Put the mixture through a medium die meat grinder.
3. Using the sausage attachment on mixer, stuff the meat into the casings. Twist and tie off to
make 4-inch sausages.
4. Cook sausage in your preferred way making sure they reach internal temperature of at least
150°F. Serve with your usual sides.
