-2 pounds russet potatoes
-vegetable, peanut, or sunflower oil for frying
-sea salt
Directions:
Peel and rinse potatoes. Slice potatoes horizontally into 1/4-1/2" thick slices. Then lay slices on their side, and cut into 1/4-1/2" French fry sticks.
Place french fry sticks in a large bowl and fill with cold water. Allow them to soak 30 minutes to 1 hour.
Drain the water and lay the french fry sticks on baking sheet lined with paper towels. Blot with paper towels to dry them.
Heat a few inches of oil in heavy pot to 300°F. Fry in batches, cooking until french fry sticks are soft, 4-5 minutes per batch. They will not be brown at this point, you are just starting the cooking process. Remove each batch and drain on dry paper towels.
Turn up heat until oil reaches 400°F. Once oil has reached temp, fry french fry sticks in batches again, until the fries are golden brown and crispy. Remove french fries from oil and drain on dry paper towels.
Sprinkle with sea salt and enjoy.
