Game Day Nachos
Ingredients:
ground beef (80/20)
1 white onion
3 cloves of garlic
2 tsp paprika
2 tsp cumin
2 tsp oregano
1 tbsp chipotle chili powder
1 15oz can black beans, drained and rinsed
1 15oz can pinto beans, drained and rinsed
steak
2 tbsp avocado oil
2 tbsp butter
2 tbsp milk
1 can cheese sauce
8 oz shredded Colby Jack cheese
1 small can diced tomatoes w/ green chilis
8 oz sour cream
1 lime
cilantro
small jar sliced jalapeños
large bag of tortilla chips
Directions:
Ground Beef and Bean Mix:
1. brown ground beef in a hot pan
2. once browned add onion, and brown
3. then add garlic and brown
4. add salt, pepper, paprika, cumin, oregano, and chipotle chili powder
5. add black beans and pinto beans and keep on a simmer
Steaks:
1. in a hot grill pan add butter and avocado oil
2. salt and pepper steaks, then place in hot pan
3. cook on each side about 3-5 minutes
4. take steak of heat and let rest
Cheese Sauce:
1. in a hot pan add milk and can of cheese sauce
2. add can of diced tomatoes with chilis, simmer and cover
Sour Cream:
1. mix sour cream, lime juice, cilantro, garlic powder, sugar, and salt
Nacho Assembly:
1. on cooking sheet covered in tin foil start layering chips, beef/bean mixture, diced steak, cheese sauce, and Colby Jack cheese
2. make three layers (total) in previous order
3. once assembled bake at 375° 5-6 minutes
4. top with sour cream, diced tomatoes, and sliced jalapeños
