Crispy Fried Chicken
3-4 lbs chicken, bone-in (breasts, legs, thighs, and wings assorted)
3 cups strained pickle juice
3 cups buttermilk
4 cups all purpose flour
2 tbsp cayenne pepper
2 tsp ground cloves
2 tsp ground coriander
2 tsp ground mace
2 tbsp paprika
2 tsp whole fennel seed
1 tsp ground mustard
2 tbsp kosher salt
2 tsp freshly ground black pepper
8 cups canola oil
favorite hot sauce for serving
In a large bowl or pot submerge chicken in pickle juice and refrigerate for 12-24 hours.
Remove chicken pieces from pickle brine and cover in buttermilk and refrigerate another 4 hours.
In a large bowl, combine the flour with all the spices. Season chicken with salt and pepper. Dredge all chicken pieces in flour, shaking off all excess flour.
Heat oil in large saucepan over medium heat until thermometer reaches 325 F.
Cooking batches, fry the chicken turning occasionally until the chicken is cooked through, about 15 minutes for white meat and 20 minutes for dark meat.
Cool chicken on a cooling rack over a baking sheet to catch excess oil. Sprinkle with salt and let cool 5 minutes before serving. Serve with favorite hot sauce.
