Breakfast Taquitos

It might be called Breakfast Taquitos, but this rolled taco is great any time of the day! This breakfast for champions is stuffed with typical morning meals: eggs, sausage, hash brown, some peppers, and cheese— leaving you full and ready for the day. The meat to be used is not limited to sausages only— ground pork, chorizo, bacon, or any meat you'd prefer as a filling. Its crispiness and juiciness are what make this taquito worth trying! Making this yourself will not become easier but it will always be better when you make it yourself.



Ingredients

  • 1/2 Large Onion

  • 1 Jalapeño

  • 1/2 cup cooking oil

  • 1 hatch green chile

  • 4 pcs Hash Brown (Patties), diced

  • Salt & Pepper taste

  • 2 packs Breakfast Sausage Link

  • 5 Flour Tortilla

  • 5 Corn Tortilla

  • 4 eggs

  • Colby Jack cheese, shredded

Spices:

  • 1 tsp Smoked Paprika

  • 1 tsp Granulated Garlic

  • 1 tsp Chili powder

  • 1 tsp Cumin

Directions:

  1. Heat the pan. Meanwhile, chop the onions and mince the chilis.

  2. Grease the pan and sauté the onion and peppers.

  3. While still in the pan, dice the hash browns. Combine with the sautéed ingredients.

  4. Season with salt and pepper before adding the sausages. Thoroughly cook the meat.

  5. Flavor with the spices (Smoked paprika, Granulated Garlic, Chili powder, Cumin). Mix until the spices fully season the meat.

  6. In another pan, heat the tortillas for one minute on each side.

  7. Beat the eggs then pour on the mixture. Stir until the eggs settle and mix together

  8. Scatter some grated cheese in the tortillas and stuff with the meat filling.

  9. Roll the tortilla. Afterward, deep fry each piece. Flip each side until it turns brown.

  10. Finish with plating and top it with more cheese.

  11. Serve while hot. Enjoy!
