Ingredients:
BBQ Rub (See ingredients below)
2 Bologna thick slice
2 tbsp Mustard
2 Hash Browns
4 pcs Texas Style Toast
1 stick butter
2 Eggs
Olive oil
Salt and Pepper to taste
2-4 American Cheese slices (depending on preference)
BBQ Rub
1 tbsp Salt
2 tsp Ground Black Pepper
2 tsp Onion Powder
2 tsp Granulated Garlic
1/4 cup Smoked Paprika
1/2 tsp Cayenne Pepper
1/4 cup Brown Sugar
Directions:
Prepare the BBQ rub by mixing it in a small bowl. (Refer to the BBQ rub ingredients listed above)
Spread mustard and BBQ rub on one side of the bologna. Place it in a pan with the covered side facing the pan. While frying, cover the other side as well. Flip until brown and both sides are thoroughly cooked.
While the bologna is still cooking, pan-fry the hash browns. Set aside once both sides turn brown.
Heat a skillet in medium heat. Butter up the bread then toasts both sides. Set it aside after.
In the same pan, grease it with cooking oil and 1/4 stick butter. Crack two eggs and cook until sunny side up. Season with salt and pepper.
You can arrange the sandwich based on your preference. For the JBros version, start with a slice of bread. Layer with a sheet of American cheese. Add the bologna followed by the hashbrown. Put another slice of cheese. Place the egg and more cheese slices. Lastly, finish it with another layer of bread.
Serve fresh. Enjoy!
