Aglio E Olio

Our very first JbrosCooking video is Aglio E Olio (spaghetti with garlic and oil)

This is a fast dish to put together so you want to start your pot of water to boil first by the time the pasta finishes boiling it will be ready to be put together.

For the garlic and oil sauce start with a cold pan, add in oil and spices. We are starting with the cold pan so that all the flavors infuse the oil as it heats. We don't add any salt as one of the spices because we salt the pasta water and the cheese we will be using is also salty. We cook the sauce at medium-low to medium heat. Stirring occasionally until the garlic is golden brown.

Check that your pot of water is boiling for the pasta and add salt. We use a thin spaghetti for this dish. Growing up in an Italian-American home we always put the pasta in whole. Cook the pasta according to your package, stir occasionally to make sure the pasta doesn't stick to the bottom of the pan. We usually cook to al dente because we like it with a little bite.

Drain the pasta and put it in a serving bowl. While draining be sure to save some of the pasta water. Pour the garlic and oil sauce over the pasta. Make sure to get all the garlic goodness out of the pan and mix pasta and sauce together. If the pasta isn't quite as moist as you like it add about quarter cup of the pasta water and stir in. Lastly, don't forget the cheese! Add some shredded Pecorino Romano cheese on top and we are ready to eat!

You can serve this pasta by its self or we like to add more carbs and serve with buttered bread.

For our garlic bread we put a pad of butter in a heated pan and melt it around the pan. Keep it on a medium heat and lay the bread face down in the buttered pan for about a minute.

Ingredients:

1/2 cup olive oil

Bulb of Garlic - crushed

1/2 tsp dried basil and oregano

Pinch of red pepper flakes

Pecorino Romano cheese

Black pepper to taste

1 lb thin spaghetti

4 tbsp salt

Directions:

1. Boil 4 quarts of water.

2. Starting with a cool pan, add olive oil, garlic, basil, oregano, and red pepper flakes.

3. Cook on medium heat until garlic turns golden brown. Add black pepper.

4. Add salt to the pasta water and boil the thin spaghetti until al dente, about 7 minutes.

5. Mix the pasta and flavored oil together, add some cheese.

For the buttered bread:

1. melt 1 tablespoon of butter on medium heat.

2. brown bread on each side for about a minute.
